I'm a sucker for these "local guy/gal does good" stories, and here's one about Seth Tibbott, the creator of Tofurky, which is manufactured in beautiful Hood River.
The story takes the usual tack of how difficult it is for vegetarians on Thanksgiving. Honestly, it doesn't have to be difficult, since, in most instances, the turkey itself isn't so great. Thanksgiving is an excuse for eating tons of carbs & veggies. The sweet potatoes and mashed taters are great with lots of butter, natch, but they can easily be adapted to something vegan that won't offend you or your guests with some recipes and some experimentation.
I have to admit, I love the idea of Tofurky. And other than Tofurky jerky, I've never tried it. Someday!
"There was this niche, this underserved market of vegetarians who had no clue what to do for Thanksgiving," says Tibbot, who now calls himself a "flexi-vegan," meaning no self-flagellation if he eats dairy products once in a while. "Our purpose was to create a bomb-proof, convenient recipe that they could serve right alongside turkey. That's what catapulted us."

Great photo! You know, I never really considered Thanksgiving a difficult time because of all the turkey. I am really excited for the veggies and potatoes, like you mentioned. Also, I have never tried tofurkey and had no idea it was made locally!

I too promise to try a tofurkey one of these days (should we hold a tasting event?).
The first time I heard of it (on NPR while driving to Thanksgiving two hours away) we became obsessed making up tofurkey radio ad jingles. My favorite (though not true)... "With Tofurkey, now everyone can have a drum stick!"
