The original Pho Van continues to recreate itself. A new remodel has rendered the space more sophisticated, but the prices are about the same. You can still get pho, salad rolls, and bun (rice noodles with veggies and protein), but you can also get some new interesting things, like beef 7 ways (bo 7 mon) and roasted whole catfish (ca nuong). Soups are $5-$7.50, entries $6.50-$8.50. One of my favs is the cha gio chay, spring rolls with tofu and taro root, with soy-ginger dipping sauce. Banh xeo, the impressive crepe filled with all sort of goodies, is also delicious. Okay, I've not had anything I don't absolutely love there. It's so yummy, I try to come up with excuses to go there, across town, several times a week.
